Zucchini pie with rice & herbs

  • 4 large zucchini, grated
  • 2 sachets parboiled 10', or 250 gr. rice parboiled 10'
  • 60 gr. virgin olive oil
  • 3 onions, chopped
  • 2 cloves garlic, chopped
  • 1 bunch of green onions, chopped
  • 250 gr. feta cheese, coarsely grated
  • 1 small bunch fresh mint, chopped
  • 1 small bunch fresh parsley, chopped
  • 4-5 fresh basil leaves, broadleaf
  • 3 eggs
  • ½ teaspoon nutmeg
  • Salt and pepper


Boil the rice according to the instructions, strain and spread on a clean towel to cool.

Heat the oil in a wide pan and gently fry the zucchini, the onions, the green onions and the garlic until the mixture is dry. Remove from heat and pour it into a bowl.

Add the rice, the cheese, the slightly beaten eggs, and all spices and mix them very well.

Grease an ovenproof dish with some oil using a brush and pour in the mixture. Then flatten the surface with a spatula.

Bake the pie in an oven at 180 º С for about 45 minutes, until the surface gets some color and makes a crispy crust.

Remove from the oven and allow it to cool for 20 minutes. Cut it into pieces and serve.
