Boil the rice according to the instructions and then drain it. Chop the onions and grate the carrot on a coarse grater. Then boil the peas for 5 minutes in salt water and drain them.
Heat the sesame oil with the olive oil in a large pan and sauté the garlic, the scallions and the ginger. Pour in the carrot, the mushrooms and the shrimp and finally add salt and pepper. Mix well and sauté until they are just soft. Finally, add the rice, the peas and the parsley. Leave them sauté all together for a few minutes (3-4 minutes).
Pour soy sauce, stir and serve immediately.
